Increasing Stats in GTA 5 

Each GTA 5 character possesses eight Stats. Each Stat may be increased through in-game practice.  
Stat Effect Increase By
Stamina Increases ability to sprint, swim, and pedal without keeling over from a heart attack. This stat is increased by 1% for every 18 yards ran, every minute swam and every minute cycled.
Shooting Improves accuracy, magazine capacity and improves reload time. Improved by hitting enemies. Improved more quickly by headshots. Also improved by Shooting Range challenges. GOLD Medals increase 3%, SILVER Medals increase 2% and BRONZE Medals increase 1%.
Strength Increases hit damage, improves durability, speeds climbing, and increases proficiency in Sports. Fighting people with your fist & playing Sports will increase your Strength.
Michael: Quickly increase by completing a set of Tennis and winning.
Stealth Increases speed and reduces noise in Stealth Mode. Practice successful Stealth Mode & Stealth Takedowns
Flying Improves airborne maneuverability and resistance to wind effects. Flying for long periods, or attending Flight School.
Driving Increases ability to perform trick maneuvers. Practice trick maneuvers and wheelies.Best improved by doing stunt jumps.
Lung Capacity Determines ability to hold breath. Swimming underwater for periods of time will increase this. (Without using Scuba Gear)
Special  Increases maximum storage capacity and duration of a character's Special Ability.  Drive fast, take damage, attack enemies, perform headshots.
Michael: Increased by getting headshots and using the ability while going on sprees.
Franklin: Quickly increased by driving against traffic and activating his special repeatedly.

Shooting Ranges rapidly improve your Weapon accuracy and Shooting Stat, but most other skills must be increased through diligent practice. Some, like Stamina, advance fairly rapidly through exploring wilderness areas on foot, while others, like Lung Capacity, can be positively tedious to increase.
